2 for 1 Breakfasts - avocado

An other quick idea for today on how to make breakfast for baby and mom at the same time using the same
main ingredient.

Avocado and banana puree is a big hit with my son. I got the idea from Nessa's family kitchen blog. (Check it out, it's full of delicious recipes for family cooking). The baby puree is super simple and quick to make, you need half of a ripe avocado and half of a ripe banana, fork mesh, done. Serve immediately as it tends go brown very fast.

After the puree is done you left with a half of an avocado for yourself to create something delicious and filling. I learned this recipe when I was an Au pair in New York (a million years ago) and my host mom use to eat a sandwich similar to this often times.

Ingredients:

1-2 slices of granary or sour dough bread
Half of an avocado
1 chunky slice of Gouda cheese (The Gouda block from Lidl is delish)
1 teasp of balsamic vinegar
Pinch of sea salt flakes

Method:

1) Fork mesh the avocado but leave it chunky
2) Mix in a teaspoon of balsamic vinegar and a pinch of sea salt.
3) Toast the bread, spread on the avocado
4) Serve with a slice of chunky gouda on top
optional: fancy it up with fresh herb or nuts
