2 for 1 Breakfasts - mango



In the early morning hours it’s hard to come up with breakfast ideas. What I have recently started to do is combine both of our breakfasts together and work with ingredients which will feed Rián and myself at the same time.

Most mornings I give Rián porridge with some kind of fruit mixed into it.

I cook his porridge in a bit of water for 5-6 min, then blend in fruit. I buy a big bag of organic porridge for the family and for Rián I put some in the blender to grind it down to “baby porridge”. It’s very easy to do. It takes 2 minutes and cost a lot less than buying baby porridge. 

For example a small pack of Organic baby porridge can cost around €3 for 250g. However a large bag of Organic porridge oats is under €2 for 1kg in Aldi. Crazy a bit no? 



Mango baby porridge

Ingredients:

1-2 slice of fresh mango diced (depending on the size)
half an apple
2 tbsp of baby porridge cooked in water, nice and thick

Method:

Put all ingredients in a blender and blend until smooth or use a hand blender and blend it in a deep mug for mess free option. If your baby is already okay with little bits of food, you can just grate the apple instead of blending and add at the end.

Note: If it’s too runny at first you might need to cook a bit more porridge. Some mangos are very juicy. On the upside you’ll have breakfast for baby already cooked for the next day. 



And now comes the grown up version ;)

Mango smootie for the sleep deprived mammies

Ingredients:

half an apple (the other half of the same apple)
the rest of the mango diced
1 pot of natural yoghurt
1 tbsp of coconut flakes
1 tbsp of porridge
2-3 ice cubes
Optional: half  a passion fruit spooned in


Method:
Blend until smooth, serve and enjoy. Makes 2 nice portions.

It is delicious and healthy. If you get yourself a travel smootie cup it is also a handy breakfast on the go or for the walk with buggy. I often make it if I know I’ll have a friend coming over. In that case I’ll prep the blender with all the ingredients, put it in the fridge and blend fresh before serving.
